Almond Flour Chocolate Chip Cookies

If you crave cookies, this is a great alternative to the typical chocolate chip cookie. It is made with almond flour which is loaded with fiber. This recipe uses a natural sugar (maple syrup) in place of refined sugar and a healthy fat (olive oil) in place of butter.

Ingredients  

  • 3 cups blanched almond flour

  • 2 eggs

  • 1 teaspoon baking powder

  • 1/3 cup maple syrup

  • 1 teaspoon vanilla extract

  • 2 tablespoons olive oil

  • 1/4 cup milk

  • 1/2 cup rolled oats

  • About 1/2 cup chocolate chips

 

 

Instructions 

  1. Preheat oven to 350F. Lightly grease a nonstick cookie sheet with a bit of olive oil. Set aside. 

  2. Combine the dry ingredients into a mixing bowl (almond flour & baking powder)

  3. In a large mixing bowl, mix together all the wet ingredients (eggs, maple syrup, vanilla extract, olive oil & milk), mix well.

  4. Add the combined dry ingredients into the wet ingredients mixture and mix well.

  5. Mix in the rolled oats, then add in the chocolate chips and mix

  6. Use a spoon to scoop up batter and place onto cookie sheet. Spread out the dough to form a cookie shape (note that the dough will not spread on its own).

  7. Bake for 7 minutes, flip the cookie sheet around and bake for another 7 mins. Use a toothpick to check for doneness. Every oven is different so cooking times may vary.

Notes: 1. Generally, I find that the texture of the cookies are better the day after, they are more moist. I am guessing this may be due to ingredients settling in with time. 2. Cookies will not be as firm as cookies using regular flour, handle gently while enjoying
