

Almond Flour Chocolate Chip Cookies
If you crave cookies, this is a great alternative to the typical chocolate chip cookie. It is made with almond flour which is loaded with fiber. This recipe uses a natural sugar (maple syrup) in place of refined sugar and a healthy fat (olive oil) in place of butter.

Ingredients

3 cups blanched almond flour

2 eggs

1 teaspoon baking powder

1/3 cup maple syrup

1 teaspoon vanilla extract

2 tablespoons olive oil

1/4 cup milk

1/2 cup rolled oats

About 1/2 cup chocolate chips
Instructions

Preheat oven to 350F. Lightly grease a nonstick cookie sheet with a bit of olive oil. Set aside.

Combine the dry ingredients into a mixing bowl (almond flour & baking powder)

In a large mixing bowl, mix together all the wet ingredients (eggs, maple syrup, vanilla extract, olive oil & milk), mix well.

Add the combined dry ingredients into the wet ingredients mixture and mix well.

Mix in the rolled oats, then add in the chocolate chips and mix

Use a spoon to scoop up batter and place onto cookie sheet. Spread out the dough to form a cookie shape (note that the dough will not spread on its own).

Bake for 7 minutes, flip the cookie sheet around and bake for another 7 mins. Use a toothpick to check for doneness. Every oven is different so cooking times may vary.

Notes: 1. Generally, I find that the texture of the cookies are better the day after, they are more moist. I am guessing this may be due to ingredients settling in with time. 2. Cookies will not be as firm as cookies using regular flour, handle gently while enjoying
